I have for my wedding in the Valley of Fire. It was great and inexpensive. (We had about 30 people, but you could be more.)
We also had a buffet with 30 in a private room McMullan's Irish Pub (we all Ireland) for $ 500.
Almost all hotels offer some kind of wedding package tape. Excalibur can be a bit cheaper than something like the Bellagio or Caesars. Try to arrive at Travelocity and see the different hotels in Las Vegas, then go to your actual website for the hotel and the departure of their wedding packages.
